Fabulous Falafel

First of all...Happy Easter!!! I hope you and yours are having a wonderful holiday!  We didn't do much today but I did whip up some wonderful baked falafel to make gyros for lunch today.  Super easy to make and healthy too!  Also, making your own falafel gyros is really very inexpensive compared to buying them in a restaurant!
