Back to Quarantine?

Things were looking up a few weeks ago when businesses and casinos in my city reopened.  Now, and I'm not sure if it was the casinos opening or the protests or people flocking to the beach at Lake Mead or for other reasons, our covid numbers are increasing and people are saying we may end up in another lockdown!  eeekkk

So hubby and I have decided to stay out of the fray and just stay home for the past few days.  Today we made empanadas for the first time using this recipe and they came out really good (I took the meat out of a couple for me).


Meanwhile, our days have been sunny and hot (around 105 degrees!) but this coming week should be ten degrees cooler which is nice.  I really really miss walking every day!

  1. I will not be at all surprised if things close again. I bet you have never heard of a tractor pull either. The empanada recipe called for putting waxed paper in the oven! I would love this pie.

    1. Yikes, did the recipe say wax paper? We use parchment paper for baking all the time now it is so convenient! p.s. I love a good tractor pull!

    1. Yep Las Vegas is a weird set of contradictions. Do we open and let tourists come here and then take the virus home with them or are tourists coming here and bringing the virus from home and sharing it with everyone here? Unfortunately it is all of the employees on the front lines of this pandemic :(

  4. Our numbers in Florida are skyrocketing. The govenor closed the bars and counties in South Florida closed beaches for the fourth of July. Meanwhile, our theme parks are open and Disney is set to open July 17th. Entrance is by reservation only.
