I love all kinds of curry--Japanese, Indian, Thai, etc--and it is so simple to make! Like any other soup or stew, add a bean/meat (I like lentils or garbanzo beans), onions, garlic, any vegetables you have on hand, and a can of diced tomatoes. Next add spices (curry powder, curry paste), and in Thai curry, I add a can of coconut milk, and you have a hearty meal that also freezes well and travels well--if we will be out, I will heat up rice and curry and bring it with me in an insulated container for a nice lunch. Yum!
